Nanny Ogg’s Parkin Pig

(Beer is not required for this recipe, but it helps the cook concentrate!)

Ingredients:

  • 200g Oats
  • 250g Self-raising flour
  • 200g Butter (don’t use Marge!)
  • 200g Soft Brown Sugar
  • 85g Treacle or Molasses
  • 200g Honey or Golden Syrup
  • 1 x large beaten Egg
  • 4 x tablespoonfuls of Milk
  • 1 x tablespoonful of Ground Ginger.

Method

  1. Warm the oven up to 160 degrees.
  2. Grease a loaf tin or similar and line with greaseproof paper.
  3. In a pan on the stove top, on a medium heat, melt the butter, then add the sugar, treacle and honey.
  4. Keep it below simmering point, but cooking until all the sugar melts.
  5. Take mixture off the heat.
  6. Now add the oats, the self-raising flour, the egg and the milk and ginger.
  7. Stir it all together into one big gooey mass.
  8. Spoon the mixture into the loaf tin.
  9. Now place it into the oven for 50 minutes to an hour.
  10. Don't forget to lick the spoon (cook's privileges!)
  11. Pull it out and allow it to cool.

Now, ‘ere is the ‘ard bit.

Once cool, wrap with MORE greaseproof paper and put it all away for about three days. Over that time, the Parkin Pig will develop in flavour and become beautiful and gooey.

Cut into squares and share on Hogswatch Eve, with a good cup of tea, coffee or libation of your choice.
